Chemical Tea at Five: How can we feed the planet? Alternative proteins as a path to sustainable food production

How can we ensure a sufficient supply of high-quality food for a growing global population while minimizing the burden on our planet? The next lecture in the Chemical Tea at Five series will explore possible answers. During the event, Jaromír Pořízka will present an innovative approach to producing alternative proteins from food industry by-products. The programme will also include a tasting of products developed as part of the research. The lecture will take place on 11 June 2026 at 5 p.m. at the VUT Centre Tržnice.

A growing global population and increasing pressure on natural resources are fundamentally changing the way we think about food production. Proteins play a crucial role in this challenge, yet their production still relies heavily on animal-based sources that require significant amounts of land, water, and energy. How can we ensure a sufficient supply of high-quality protein in a more sustainable way?

The lecture will present an alternative approach based on the efficient use of food industry by-products. At Brno University of Technology, a wheat bran biorefinery concept has been developed and experimentally validated. Wheat bran is an abundant and inexpensive raw material generated during grain processing that is currently used only to a limited extent, for example as animal feed, for energy recovery, or as a waste stream.

One of the key branches of this biorefinery is the production of a nutritionally valuable dietary protein. This protein has subsequently been successfully applied in the innovation of common food products, including dairy and bakery products.

The lecture will demonstrate how the principles of the circular economy, modern food technologies, and the development of alternative proteins can be combined to create foods that are more environmentally friendly and more accessible for future generations.
