Podcast Technicky vzato: Will protein bread save our health?

How are modern technologies changing our world? Scientists, students, and alumni from Brno University of Technology explain, in a simple and accessible way, topics that increasingly shape our lives, yet we often don’t fully understand them. Proteins play a key role in the human body – they support the immune system, aid regeneration, and help prevent the development of certain lifestyle diseases. Yet most people still consume less protein than they need. That’s one of the reasons why even traditional baking is now partly moving into laboratories, where scientists are looking for ways to adapt everyday foods so they remain tasty while offering higher nutritional value. One such approach is high-protein bakery products, which can help supplement essential proteins, support health, and respond to changing lifestyles and societal needs.

“When I cook at home, I experiment and play with flavors. In the lab, however, I have to follow a precise protocol. Currently, I focus on understanding the interactions between individual ingredients so I can better predict and influence how the final product will taste, what texture it will have, and how to develop new bakery products that customers will enjoy just as much as the traditional ones they are used to,” explains PhD student Olga Stoklásková from the Faculty of Chemistry at BUT, who focuses on the development of high-protein bakery products.
