Sledování koncentrace biogenních aminů při fermentaci zelených rajčat kmeny Lactobacillus plantarum

English abstract

Changes of biogenic amines were followed during production of fermented green tomato. The effect of two strains of starter cultures, Lactobacillus plantarum strain 976H and 3626 on amine production was investigated.
