In this study, grain and malt samples of four different barley varieties (Jersey, Tolar, AF Lucius and experimental barley line KM 2283) have been chosen for proteins evaluation and further comparison. For this purpose, gel electrophoresis, HPLC on reverse phase and identification using MALDI mass spectrometry after enzymatic digest were used. This approach could be used for potential discrimination of individual barley varieties in reference to brewing signification.
