Original Abstract

Research on antioxidant properties of medicinal plants has gained enormous popularity in recent years. Medicinal plants are being viewed as easily available source of antioxidants. Antioxidant effect of herbs is mainly attributed to phenolic compounds (flavonoids and phenolic acids) and carotenoids, but the role of non-flavonoid antioxidants is widely discussed, as well. Besides antioxidant activity flavonoids and carotenoids contribute to the creation of colour in herbs. The aim of this study was to compare the antioxidant and colour characteristics of various types of herbs originating from two different locations in the Czech Republic.
