Extracellular polymeric substances (EPS) produced by carotenoid-producing yeasts are promising biopolymers with various potential applications. These yeasts can synthesize complex extracellular matrices exhibiting bioactive properties. Yeast-derived EPS production is still poorly characterized, and the factors influencing its synthesis are not yet fully understood. The aim of this study was to optimize cultivation and isolation conditions for different EPS fractions and to characterize their biochemical composition to better understand their structure–function relationships.
