Originální abstrakt
Neohesperidin dihydrochalcone (NHDC), a highly promising representative of biological origin sweeteners. It is produced by the hydrogenation of either naringin or hesperidin contained in the peel of citruses. It is 1500 times sweeter than sucrose and, sometimes, works as a taste modifier, too. NHDC occures scarcely in the czech market. The increase of the NHDC consumption is to be expected in near future. NHDC is added to foodstuffs in very low amounts because of its high sweeteness. Its extraction with organic solvents (methanol, dimethylsulphoxide) is single preconcentration method utilized to date in communications on the quantitative determination of the sweetener in food. We searched for alternative methods for the NHDC preconcentration, which are based on the food matrix elimination, because of the dimethylsulfoxide toxicity. The pressurized solvent extraction (PSE) utilizing ethanol as an extraction agent and the solid phase extraction (SPE) technique were tested for the purpose. HPLC analysis of samples preconcentrated using the SPE method allows quantitative determination of NHDC at its concentration level of the order of 2 close to 10 mg/kg of a food matrix. This developed and validated method was tested using flavoured hard candies.
