The presence of multiple forms of polygalacturonase ( E.C. 3.2.1.15) was established. The mixture of polygalacturonases split the substrate by typical ando-mechanism.Polygalacturonases preferred sodium pectate as the substrate.On the other hand,oligouronic acides were split slowly, dimer was not split at all and trimer was split extremly slowly.
